Sunday Lunch: Turkey Meatballs & Roasted Veggies

We are bringing back Sunday family lunch on the homestead! My husband grew up in a large family that gathered after church each Sunday to enjoy a home cooked meal together and it was a great start to the week. Revival of that tradition is important to us! It’s all about intentional family time, slowing down, and enjoying our home together before the hustle of the upcoming week.


Ingredients

Turkey Meatballs

  • 4lb ground turkey
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2-3 cloves fresh garlic, minced
  • 3-4 tbs Worcestershire sauce 
  • Salt & pepper to taste

These meatballs will quickly become a regular in your meal rotation! The simple ingredients combined with the easy prep makes this a success for any day of the week.

Turkey Meatball Instructions

  1. Preheat oven to 350 degrees
  2. Combine all ingredients in large mixing bowl
  3. Form into meatballs
  4. Place on baking sheet lined with foil and sprayed with non-stick cooking spray
  5. Bake at 350 degrees for 25-30 minutes
  6. Serve

Tip: Use a cookie dough or ice cream scoop to help create the perfect meatball shape

Roasted Veggies

  • Olive Oil
  • Balsamic
  • Salt
  • Pepper
  • Garlic Salt
  • Brussels Sprouts 
  • Carrots
  • Onions
  • Bell pepper 
  • Broccoli

Roasted Veggie Instructions

  1. Preheat oven to 350 degrees
  2. Chop all veggies to preference
  3. Place on baking sheet lined with foil
  4. Drizzle with olive oil & balsamic drizzle
  5. Salt, pepper, and garlic salt to taste
  6. Roast at 350 for 25-30 minutes
  7. Serve

Tip: You can use whatever veg you have on hand! I use whatever we have in the fridge. It’s a great (and delicious) way to use the veg that needs to be eaten ASAP.

If you put the turkey meatballs and the veggies into the oven at the same time, they’re done at the same time! Between the minimal prep work, cook time, and dishes used for these recipes, it’s the perfect meal to add to your go to meals list. We will often double the turkey meatball recipe to ensure we have leftovers that make quick lunches throughout the week!
